nutty nut chocolate clusters

Are you having people over for coffee? Need a little something, something to give to your guest after dinner? Or maybe on Sunday afternoon you want to guarantee that there is a treat for yourself after your long work days in the coming week. These ridiculously easy bundles of pure joy fill your sweet salty craving and don’t have you sweating while making them. So eat up my little buttercups because these are desilicious!

Ingredients

2  Cup     Assorted Nuts (walnuts, cashews, almonds, pecans work great!)

1  Bar     Good quality dark chocolate

1/2 Bar    White Chocolate

1 tbs        Salt (Fleur de sel if you have it but any course salt will do)

Method

Step 1- Get Roasting

Roast your assortment of nuts by placing them on a baking tray lined with parchment paper. Spread them in an even later and throw them in a 350′ oven for 5-10 min. Your nose will be the real timer in this roasting nuts adventure. When you smell them, take them out. 

You can of course also achieve this by tossing your nuts in a dry hot pan but remember to keep moving those nuts around because the roasting process is a fast one!

Step 2-Melting

While those nuts are getting nuttier by roasting away let’s start to melt that chocolate. 

Create a double boiler by putting a couple inches of water in a small pot and letting it come to a simmer. 

Place chocolate in a bowl that can sit on top of your pot without the bottom touching the water. 

It is the steam of the water that melts your chocolate nice and slow while keeping it creamy and decadent. 

Please don’t be afraid to remove the chocolate off the double boiler before all solids have dissolved. The residual heat will finish those stubborn little bits into the oozing soft almost liquefied appearance of their peers.

Repeat process for the white chocolate. 

Step 3-Assemble

On a baking sheet lined with parchment place 4-5 of the roasted nuts in a little pile. 

Pour about 1-2 tbs of the dark chocolate over the nuts. 

Then use a fork and dip it in the white chocolate to create beautiful, yummy drizzles on top of the nuts and dark chocolate. 

Top off with a wee bit of salt.  

Repeat the process till you have used all your ingredients up. 

Depending on the size you make them you will get between 12 and 24. 

Place in the fridge or freezer until they are hard and clustered all together.

Store in the fridge or freezer in an airtight container. Eat. Enjoy. Fall in love.
