Even if you eat dairy yogurt (I do too!) I would suggest to you to still give this a go. I could tell you to do it because it is so cost effective and so yummy, but in all honesty, do it for the satisfaction! It is ever so cool to truly create something from start to finish and be able to customize to your own liking. And it is almost too easy for the amount of satisfaction you get!
This is a great starter point if you are used to commercial sweet yogurts. If you prefer a less sweet style feel free to play away. I think the plain coconut yogurt stirred with a drop of vanilla extract and a squeeze of honey or maple syrup topped with some berries is perfection! But this is the way my husband likes it!
The List
1 can coconut milk
2 probiotics capsules
Jar (with lid)
cheesecloth
Wooden Spoon (do not use metal)
1 Cup Strawberries
1 tsp Vanilla
2 tbsp maple syrup
2 tbsp water
1 tbsp chia seeds
The Method
Step 1-Making Yogourt
Empty coconut milk into jar. Stir to a smooth consistency
Lightly twist open the probiotic pills and empty into the coconut milk.
Stir well with a wooden spoon (I use a wooden honey stick)
Cover with cheesecloth and an elastic Ban and wait…
48 hours Stirring well at the 24 hour mark
After 48 hours remove cheesecloth and replace with lid and place in the fridge. Within a few hours (I like overnight best!) you will have beautiful coconut yogurt
Step 2-Strawberry Chia Jam
Place strawberries, vanilla, maple syrup ,and water in a small saucepan.
Bring to a light boil and simmer until strawberries start to break down (5 min-10)
Allow to cool stove top for a 5-10 min then add chia seeds and stir
Place in fridge!
Obviously this is delicious on whatever you chose but my husband loves it layered between the thick lush coconut yogurt topped with granola!
