Mondays are hard.You woke up earlier and more rushed, you are getting back into a rhythm and it’s difficult at best. On top of that you are mourning the weekend aka freedom. Now after getting through the entire day work day (which reminds you how hard you work!) dinner often seems more like a chore. I know you want to cook and get this week off on the right foot but a box of Annie’s or fooddora calls your name ever so sweetly.

This is barely cooking and is filled with life! So much flavour and self love that you might even fall in love with Tuesday! Or at least excited to wake up because you are taking leftovers for lunch!
Oh did I mention you barely have to cook?
Ingredients
Peanut Satay Sauce
Peanut Butter (Natural Prefered) 3 TBSP
Soy Sauce 2 TBSP
Rice Wine Vinegar 1 TBSP
Honey 1.5 TBSP
Siracha you make the call!!
Ginger 1 TBSP
Garlic 1-2 Cloves
Place everything in a blender or food Processor and blend till smooth. If you prefer a thinner sauce at 1-2 TBSP of water
Rice Noodles Half of a Package
Place in a bowl and pour boiling water over to cover. Leave for 5-7 min and drain
Zucchini 1 Zoodled
Carrot 1 Zoodled
Red Pepper 1 Cut finely
Green Onion 2-3 Stocks Cut finely
Peanuts ½ C Coarsely Chopped
Place warm rice noodles and all the veg in a bowl and gently toss with the dressing.
Top with peanuts and more green onion! I would also love to add cilantro but my hubby to be doesn’t like it…hmm Should you marry someone who doesn’t like cilantro?
