Mondays are hard. You woke up earlier and more rushed, you are getting back into a rhythm and it’s difficult at best. On top of that you are mourning the weekend aka freedom. Now after getting through the entire day work day (which reminds you how hard you work!) dinner often seems more like a chore. I know you want to cook and get this week off on the right foot but a box of Annie’s or fooddora calls your name ever so sweetly.
This is barely cooking and is filled with life! So much flavour and self love that you might even fall in love with Tuesday! Or at least excited to wake up because you are taking leftovers for lunch!
Oh did I mention you barely have to cook?
