The Salad Jar

Health/Food crazes (let’s admit it) are mostly just annoying and a way for other people to make money off our insecurities. That being said every so often one of those pinterest/instagram annoyances of an idea is actually good and these salad jars are one of them! Vegan, nut/wheat allergies, dairy issues, it does not matter. You can get so creative with these, travel the world through the jar man!

But of course to get you started this is one of my faves!

Super easy 25 min sunday prep to keep you full and healthy around lunch for the rest of the week!

Dressing

Ingredients

6 tbsp  olive oil

2 tbsp white wine vinegar

2 tbsp chopped fresh parsley

1 tbsp  fresh lemon juice

2 garlic cloves, chopped

1 tsp sugar

1 tsp dried basil, crumbled

1/4 tsp dried crushed red pepper

¼ tsp of dried oregano

Preparation

Dissolve sugar in vinegar and then add herbs and garlic. Stir in Olive oil.

(Shake before each use)*

*I love making my own dressing but you can always use a fave. I love making mine in a jar with a great lid so I can just give it a shake every time I need it and keep any leftovers in the fridge.

Salad

Ingredients

¼ c chickpeas

2 tbsp fennel (diced)

2 tbsp celery (diced)

2 tbsp red pepper (diced)

½ c spinach or mixed greens or broccoli slaw

1 small tuna can (in olive oil preferably

Preparation

Grab a jar with a good lid or a mason jar. 

Place 3 tbsp of dressing in bottom of jar

then the chickpeas,tuna, veggies and top with your leafy greens! 

When it is time to eat shake it, shake it real good
